Green Project October - Middle 1 and Middle 2

In our Green Project, October is all about composting.
As part of Civic Education this week Middle 1 and Middle 2 have learnt about a restaurant called Baldio in Mexico, which is Zero Waste.
They don’t have any bins in their kitchen. All the food waste is used in Aztec floating farms, known as chinampas to grow the food then used in their restaurant.

The restaurant focuses on creating a circular, zero-waste food system by using all parts of the ingredients and employing techniques like fermentation to preserve and upcycle food waste.

As a result, the restaurant has been awarded a “Green Michelin Star”.
